The Dorigati winery is located in the historic center of Mezzocorona, in the province of Trento. As far as white wines are concerned, they carry out a classic white vinification, with temperatures of about 16 ° C to favor the metabolism of yeasts, preventing them from going into stress with the consequent production of unpleasant aromatic substances. The red vinification is instead supported by pumping over, which they believe to be the most delicate method for extracting the polyphenolic substances from the grape skins. The number of these pumpovers varies according to the quality of the grapes as a result of the climatic year. After a maceration of about 8-10 days, the racking follows.
