Antonio Buccoliero is a winemaker from Sava, in the province of Taranto, who inherited his passion for viticulture from his grandfather Antonio and his father Giuseppe. He manages a small plot of land with sapling vines that are over 50 years old, grown using dryland farming. His "Èja" project aims to transform the vineyard into a "living sapling museum" to pass on the culture of the area to new generations. He uses precision agriculture techniques, such as drones with multispectral sensors and weather stations, to monitor the condition of the plants and minimize phytosanitary treatments. Yields are low, between 35 and 45 quintals per hectare. In the cellar, the Primitivo grapes ferment for about 45 days with selected yeasts and the wine ages in used barriques for over a year, without filtration or clarification.
